To prepare the peanut dressing, cmbine the peanut butter, soy sauce, sugar, vinegar, rice wine, sesame oil, spring onion, ginger, chili sauce and stock
in a blender. Blend to a smooth paste, adding more chicken stock if needed. Pour into a bowl
Slice the cucumbers lengthways. Cut each half crossways into third, then cut each piece lengthways into thin slices about 5 cm long. Place the slices
in a bowl, add salt, toss and set aside for 20 minutes.
Soak the noodles in hot water for 10 minutes, drain and cut them into 8 cm length. Blanch in a pan of boiling water for 3 minutes, refresh in cold water
and drain. Toss the noodles in sesame oil and put it on a plate. Put the cucumber on top, then add the chicken shreds. Pour over the peanut dressing and
sprinkle with spring onions.

Bang Bang Chicken ist ein schnelles Gericht. Praktischerweise eignet sich dazu das Fleisch, welches beim Zubereiten einer Hühnerbrühe anfällt. Natürlich kann man in einer luxuriösen Variante auch in Ingmerwasser gekochte Hühnerbrust nutzen.
